Crush your Ice in your Lewis Bag with mallet. If you do not have a Lewis Bag remove your pebble ice mold from your freezer
Add 1 scoop worth of crushed ice/ pebble ice to your large tin
In your small tin add both of your bitters
In small tin drop in your piece of ginger and muddle well with your bar muddler
In small tin add your Mezcal, Galliano, Agave, and Fresh Lemon Juice
Combine tins and form a seal
Whip shake until you no longer hear ice in your tin
Break your seal and dirty pour through a fine cocktail strainer into your double rocks glass of choice
Pack the remainder of your crushed/ pebble ice into glassware to the brim
Garnish with Lemon wheel and Candied Ginger with Cocktail Pick
