This post is going to show you exactly how to make a delicious Pineapple Daiquiri!
Daiquiris originally started as three simple ingredients! A spirit, citrus, and sugar came together to form a light and refreshing base for many Daiquiri creations to spawn from.
I am going to show you an original Sweet Recipe of mine that combines two rums, fresh pineapple juice, sugar, and fresh lime juice! This recipe is one of my absolute favorites and I’m sure you will love it as well! Let’s get right into it! I call this:
“Beachy Keen”
What You Will Need

For this Pineapple Daiquiri we will actually be using a pineapple rum! I love to use Plantation Stiggins Fancy Pineapple Rum. This is a quality rum that is smooth, full of flavor, and really accentuates the fresh fruit juice that we will be putting into this Daiquiri. There are smoky notes full of tropical fruit, pineapple, citrus zest, and just a bit of cloves. The pineapple taste really comes through in a way that tastes classy and refined. This is a great rum to have on deck at your home bar! Try it out in an old fashioned or even just to sip on the rocks! I got my bottle at Total Wine and More but you can find this rum at Bevmo as well.
Originally, I used to just use the Plantation Pineapple Rum for this recipe. One day when I was making this cocktail, I was running short on my go to rum. I had a bit of Koloa Dark Rum on hand and decided to add it to the recipe. Little did I know I just blew my old recipe out of the water! This addition of Koloa Kaua’i Dark Hawaiian Rum was a game changer! This rum adds notes of caramel, vanilla, molasses, and cloves. All of these flavors blend so well with the Plantation Rum and the fresh fruit juices we will be adding into this Pineapple Daiquiri. I really love this dark rum and highly suggest you add it into your home bar! I got my bottle at Total Wine and More, but you can find this at Bevmo, and some select Liquor Stores!
Citrus and other Fresh Ingredients:
The citrus we will be using for this Pineapple Daiquiri will be Fresh Lime Juice! Over here at Sweet Nectar we ONLY use fresh fruit juice!!! The taste and quality just can’t be beat! And get this, it really just takes minimal effort! The tool I am using in the photo above is my stainless steel hand-pressed citrus juicer! This has probably been my favorite addition to my home bar. I absolutely love being able to fit in multiple pieces of fruit at once, having a pour spout, having an ease with the squeeze, and never having any mess! This thing is amazing! Trust me, you’re going to want to have this on hand as your elevating your cocktail game! Grab one just like mine RIGHT HERE!
Next we will be making some Fresh Pineapple Juice!!! Although this is a little more tedious than the fresh lime juice, it is well worth the process! Nothing beats the taste of fresh pineapple juice. One of the best parts is that if you have any extra you can just drink it!
You will want to pick out a pineapple for yourself at the grocery store. A pineapple that is ready to be juiced will have discoloration on the bottom and have a very sweet smell. It may almost look as though it is going bad on the bottom but that is when they are actually perfect!!
After you have remove the tough skin, and the core, you should be left with juicy pineapple flesh that you can cut into small cubes.
The next step requires a blender of sorts. If you have an actual fruit juicer please feel free to use that! My blender of choice is the Ninja Blender! This blender is always fast, easy to clean, and convenient to use! If you’re a smoothie lover like me, then this bad boy is also your best friend. I got my Ninja at Target, but you can also get the same exact one on Amazon RIGHT HERE!
This Ninja works perfectly for the Pineapple Daiquiri we are creating. Toss in all pineapple pieces and blend away! If you picked a very juicy pineapple you should not have to add any liquid. If for some reason the pineapple is having a hard time breaking down add in a 1/2 cup of water to loosen everything up.
Once the pineapple is well blended it will be full of pulp and quite frothy. That’s where a Nut Milk Bag comes in! You will pour your blended pineapple into the nut milk bag. I suggest having the nut milk bag positioned over a large bowl in order to catch all of the juice. Push down and squeeze the nut milk bag releasing all of the juice! You can discard the left over dry pulp unless you want to use it for another purpose. You can get yourself really affordable nut milk bags RIGHT HERE!
Once you are all done extracting your fresh pineapple juice with the nut milk bag you can store it in a container of your choice! For this particular round of cocktails I used a Mason Jar. Most fresh fruit juices will stay good in the fridge for up to 5 days. I’ve found that pineapple juice will turn a little more quickly than other juices so make sure to always label and date your product! Also always taste everything before preparing cocktails. This ensures you are using the most delicious and quality ingredients for yourself and friends!
The last ingredient we will need to make for this Pineapple Daiquiri recipe is Simple Syrup! Simple syrup truly is one of the most simple things to make in the entire world! Sometimes there are different ratios used to create different levels of sweetness, but for this cocktail we will be using a classic ratio of 1:1. That means 1 part white sugar to 1 part hot water!
- Get a pot on the stove and add in desired amount of water.
- Once the water gets to a slight boil add in equal amounts of white sugar.
- Lower the heat a bit because you do not want to boil the sugar.
- Continuously stir until you get a syrup like consistency as shown in the photo above.
- Pull off of the heat and let cool.
- You did it!
I love storing my syrups and juices in glass bottles with pour spouts as shown in the photo above! These little glass bottles fit so easily into the fridge, they’re easy to use, and they add a professional aspect to your home bar. Bar Supplies:
The first bar essential you will need is a Shaker! My shaker of choice has ALWAYS been the Boston Shaker. I love having two separate tins for building a cocktail, and the range of motion I get with my shake! When you are shaking your cocktail you are simutaneously diluting the ingredients and growing them in volume at the same time. This happens from shaking with ice. There are several different shaking techniques but we will just be shaking with normal cubed ice for this Pineapple Daiquiri! You can check out a Boston Shaker just like mine RIGHT HERE!
The next bar essential you will need to have on deck is a Jigger! A jigger is how you measure the ingredients of a cocktail. A great cocktail is balanced, consistent, and beautiful. You can attain all three of those requirements by using a jigger! My jigger shown in the photo above ranges from 1/4th oz to 2 oz. You can check out a jigger identical to mine RIGHT HERE!
I must admit, when I was just starting to learn how to bartend, I used a much more simplified jigger. It had only one side, very clear measurements, and a pour spout! It really helped me build my skills and confidence behind the bar! I will link the exact jigger I used to use in the early days for you RIGHT HERE. Cheers to learning new skills!
You most certainly will need to have a Strainer! For this particular Pineapple Daiquiri we will be using a technique called Double Straining. This means that you strain the cocktail through a Hawthorne Strainer and then a Fine Mesh Cocktail Strainer before the drink splashes into your glassware. As you can see in the photo above, this straining process is done simultaneously! Hawthorne strainers stop large particles from entering a finished drink, but the fine mesh cocktail strainer will catch any small pieces of pulp or tiny shards of ice. This technique really gives you a clean and professional looking final cocktail! You can check out a fine mesh cocktail strainer HERE and a hawthorne strainer HERE!
I also must mention that you will need ICE. Lots of people have fridges with an ice dispenser which is perfect for you to use. Alas, if you do not have accessible fridge Ice, AKA ME, you will have to freeze your own! As you see above I use a silicone perfect ice cube tray. I will link an identical one that comes with a LID right HERE! I am lucky enough to have a cocktail store near me as well that carries perfect ice in every size but that is not always the most affordable option. I would still suggest you check if any such stores exist near your location! Although a little more pricey, definitely worth it in quality!!!
I do recommend that if you are starting to create multiple cocktails at home, you should invest in your own personal little Bartending Kit. Most come with everything you will need as a beginner while others provide several items for more complex creations. I will put links to both a beginners set, and a more advanced set on Amazon below!

- 1 Coupe Glass
Ingredients
- 1 oz Plantation Pineapple Rum
- ½ oz Koloa Dark Rum
- 1 ½ oz Fresh Pineapple Juice
- ½ oz Fresh Lime Juice
- ½ oz Simple Syrup
Instructions
- Have your coupe glass chilling in the freezer 15-30 minutes prior to making cocktail
- In small tin add all ingredients
- In large tin add cubed ice
- Combine tins, form a seal, and shake vigorously for about 20 seconds
- Break seal and double strain cocktail into chilled coupe glass
- Garnish cocktail with fresh slice of pineapple
- Enjoy!!!
